Directions: PLACE roast, rib side down, in shallow roasting pan. Insert meat thermometer into roast without touching bone. Roast at 325°F for 1 1/2 to 2 hours or until thermometer registers 155°F. BLEND apricot-pineapple preserves, mustard, pineapple juice, soy sauce and ginger in small bowl. Baste roast occasionally with mustard mixture during last 20 minutes of cooking.
